Sweet Potato and Sausage Stuffing Recipe

Sweet Potato and Sausage Stuffing
Ingredients:
- 1 qt of medium diced sweet potatoes
- 1 pound of ground Italian sausage
- 1 cup diced onion
- 1 cup of diced celery
- 1 qt breadcrumbs
- 2 tablespoon spoons of dried sage
- 1 cup of olive oil
- 1 tablespoon of butter
- 2 cups of chicken stock
Method:
- Dice 1qt of sweet potatoes and mix with salt, pepper, olive oil and dried sage; then roast at 350º for 20 minutes
- Dice 1 cup of celery and onion and sauté with butter
- Add Italian sausage to celery and onion and cook until brown
- Add roasted sweet potatoes and cook for 5 minutes
- Add breadcrumbs and 1 cup of chicken stock
- Then bake at 350º for 15 minutes uncovered
