Sweet Potato and Sausage Stuffing Recipe

Sweet Potato and Sausage Stuffing

Ingredients:

  • 1 qt of medium diced sweet potatoes
  • 1 pound of ground Italian sausage
  • 1 cup diced onion
  • 1 cup of diced celery
  • 1 qt breadcrumbs
  • 2 tablespoon spoons of dried sage
  • 1 cup of olive oil
  • 1 tablespoon of butter
  • 2 cups of chicken stock

 

Method:

  • Dice 1qt of sweet potatoes and mix with salt, pepper, olive oil and dried sage; then roast at 350º for 20 minutes
  • Dice 1 cup of celery and onion and sauté with butter
  • Add Italian sausage to celery and onion and cook until brown
  • Add roasted sweet potatoes and cook for 5 minutes
  • Add breadcrumbs and 1 cup of chicken stock
  • Then bake at 350º  for 15 minutes uncovered
