However, if you have already tried Rue’s Braised Rabbit with wine selected by Curry during your last time visiting 39 Rue De Jean, then you’re most likely aware of his pairing expertise. In this new One Minute Moment segment, Rue Savannah’s favorite GM chose to discuss the pairing between the classic French dish, Crème Brûlée and an especially sweet, Sauternes wine.
If Sauternes is a new term for you, expect a very sweet flavor typically embodied by honeyed apricot, butterscotch, caramel, coconut, mango, ginger, marmalade, and citrus themes, along with tropical fruit, honeysuckle, and toasted baking spices.
The fact that this sweet, heavenly tasting wine is created by molds in the Bordeaux region of France is quite interesting. As Curry mentions, Sauternes is a small region of the Graves section in Bordeaux right by the river, which means a large amount of humidity. Those who create Sauternes wine, cultivate Semillon, Sauvignon Blanc and Muscadelle grapes that have been affected by a mold or rot known as Botrytis Cinerea.
The thought of drinking a glass of wine that’s cultivated by rotten grapes can be a scary thought, however the rotten grapes allow the sugar ratio to differ from other grapes and in turn allows there to be residual sugar in this sweet French wine.
